Shaoxing cooking wine is an essential ingredient in Chinese cuisine. It’s part of a group of sweet rice wines known as ‘yellow’ wines, or huang jiu.

Shaoxing wine is made from three ingredients: water, rice and wheat. It has a sweet, heady flavour with a sharp, dry finish. In China, it’s used in braised dishes like Chairman Mao’s red-braised pork.

Try this recipe for gong bao chicken. Shaoxing cooking wine adds depth and complexity to the sauce.

Shaoxing wine is also used in marinades. Toss chicken or beef with a spoonful of cooking wine and a little cornflour. Leave to sit for 15 minutes to one hour. The process tenderises the meat and stops it from drying out.

Shaoxing cooking wine is a versatile addition to your pantry. You can use it to deglaze your pan after browning meat. It’s also great for flavouring wonton fillings.
