De Buyer’s Blue Steel frying pan delivers excellent caramelisation, whether you’re searing a steak or sautéing scallops. Lightweight but extremely durable, this pan is perfect for gas hobs. It heats up quickly and evenly for efficient, controlled cooking. The classic Lyonnaise shape – with high, flared sides – makes it easy to slide food from pan to plate.

Like the Carbone Plus and Mineral B pans, De Buyer’s Blue Steel frying pan will develop a natural non-stick patina over time. It features a welded iron handle that is comfortable to hold and angled upwards to protect your hand from the heat of the hob. The pan appears slightly blue due to the thermal treatment it receives.

Not suitable for induction hobs. The pans are thermally treated to prevent oxidation but some small rust spots may be visible on arrival. These can be easily cleaned off before first use.

Caring for your pan: Not dishwasher safe. Scrape clean with a brush and lightly oil before storing in a dry place. Do not use detergents. Oven safe up to 260C.

All De Buyer Pans have a convex shape to the base of 1-2%. This stabilises the pan during the heating process and prevents the pan from potential warping.
